This 16cm chef’s knife unfolds to a medium-sized 1.4116 stainless steel blade (8cm) that is ideal for chopping and slicing both meat and vegetables. - It is made of a high carbon 1.4116 German stainless steel, and ranks 56-57 on the Rockwell hardness scale, which makes for a compact knife that still offers a powerful and controlled cut.
- The blade is hand-sharpened at a 15-degree angle for an even and sharp edge from heel to tip, which is fully protected when the knife is folded down.
