This 16.5cm santoku knife forms part of the Kai Shun Classic collection of authentic Japanese kitchen knives. Ideal for mincing, slicing and dicing. The traditional straight edge and narrow sheep’s foot blade allows for precise cutting of meat, fish, vegetables and herbs. Each knife in the series has been created using high-performance VG-MAX steel at Rockwell 60-61 with a double-bevel blade angled at 16° providing excellent edge retention and cutting performance. Other knives are also available in this range.
